Osteria Francescana - Massimo Bottura's Modena

Modena · opened 1995 · 3 stars since 2011 · won World's Best Restaurant at 50 Best in 2016 and 2018.

"Sensations" tasting menu of 12 courses · €300/person · wine pairing €180 · 28 seats · book 3-4 months ahead, no exceptions.

Wanvela slots Osteria Francescana into Emilia-Romagna trips, usually lunch, then drive on to Florence.

Le Calandre - Massimiliano Alajmo (youngest to earn 3 stars)

Sarmeola di Rubano, near Padua · 3 stars since 2003, chef Alajmo was 28, youngest in history.

"Max" tasting in 9 courses · €260 · signature is the Saffron Risotto Liquid Spherification. Wanvela books on transit days between Venice and Verona.

Da Vittorio - the Cerea family at Brusaporto

Brusaporto (near Bergamo) · opened 1966 · 3 stars since 2010 · run today by Chicco and Bobo Cerea.

The signature dish: Paccheri alla Vittorio, pasta tubes finished tableside by three chefs. €260-310/person. Classical Italian backbone, modern technique.

Piazza Duomo - Enrico Crippa in Alba (truffle country)

Alba, Piedmont · 3 stars since 2012 · chef Crippa trained with Ferran Adrià at El Bulli.

Dining room above Hotel I Castelli · €295 · October-November coincides with white truffle season, Wanvela slots this in for clients on truffle hunting trips.

Reale - Niko Romito in Castel di Sangro

Castel di Sangro, Abruzzo · 3 stars since 2013 · the only 3-star in Abruzzo.

Niko Romito is self-taught, never went to culinary school. Cuisine is essential: 3-4 ingredients per dish. €280/person. Clients need to stay overnight because the restaurant is remote.
